What's Cooking Good Looking? Seasoned Sweet Potato Fries

One of my guilty pleasures is French fries. There, I said it! It’s true. Yet, I love to be healthy – it’s a constant battle of balance. Sometimes though, when I want to combine the two ideas and have a snack, which is just as satisfying and incredibly tasty, I reach for sweet potatoes.

Sweet potatoes can be prepared in many ways, but one of those ways is the French fries substitute: sweet potato fries! And the way I make them, they are even tastier than regular French fries – even if I do say so myself.

What you need to make enough to share:

·      2 or 3 large sweet potatoes

·      Pink Himalayan salt

·      Black pepper

·      Cayenne pepper

·      Mixed herbs

·      4 or 5 cloves of garlic

·      Olive or coconut oil

This recipe could not be simpler to follow. Preheat your oven to 400°F. Wash, dry and peel the sweet potatoes. Chop them into the shape of fries, but try to keep them roughly equal width and length as each other.

Line your baking tray with parchment. I put a few dots of oil under the parchment to keep the paper in place. Spread some oil on the parchment and cover the sweet potato in oil and place them evenly on the baking tray.

Sprinkle liberally with salt, pepper, cayenne pepper (depending how hot you like them), and mixed herbs. 

Gently press the garlic cloves with the flat side of a blade to burst a little and release more flavour. Then, add them to the baking tray, among the sweet potato.

Place the baking tray in the middle of the oven to roast for 50-60 minutes. At about halfway through, turn the sweet potato fries over, to ensure an even colouring.

The finished sweet potato fries will be crunchy on the outside and soft in the middle. Don’t worry if you forget to turn them over, they will still be delicious!

·      Low glycemic index

Another wonderful advantage of buying sweet potatoes is that they are very versatile to cook with. Why not also try grilling, steaming, puréeing or frying them, and they can even be used as an ingredient in baking, or to make soups and stews!
